摘要:建立HPLC法同时测定橡木桶陈酿原酒中没食子酸、香草酸、丁香酸、香草醛、丁香醛、鞣花酸6种醛酸类化合物的含量。以小曲清香型白酒为基酒,通过橡木桶进行陈酿,检测酒样中 6 种醛酸类化合物的含量。采用Waters Atlantis T3 色谱柱(4.6 mm×250 mm,5 μm),乙腈-0.1%磷酸作为流动相梯度洗脱,流速 1.0 mL/min,柱温30 ℃,检测波长270 nm;进样量10 μL。实验结果表明没食子酸、香草酸、丁香酸、香草醛、丁香醛、鞣花酸在各自范围内线性关系良好(r≥0.999 9),平均加标回收率96.07%~100.95%,RSD 0.82%~4.13%。该方法操作简单,准确度高,重复性好,为橡木桶在白酒行业中的应用提供参考依据。

Simultaneous Determination of Multiple Index Contents in Oak Barrel Aged Raw Wine by HPLC

Abstract:To establish an HPLC method for the simultaneous determination of gallic acid, vanillic acid, syringic acid, vanillin, syringaldehyde, and ellagic acid in 6 kinds of aldehydes in oak barrel aged wine. The Xiaoqu fresh-flavor liquor was used as the base wine and aged in oak barrels to detect the content of 6 aldehyde compounds in the wine samples. A Waters Atlantis T3 column (4.6 mm ×250 mm, 5 μm) was used, acetonitrile-0.1% phosphoric acid was used as the mobile phase for gradient elution, the flow rate was 1.0mL/min, the column temperature was 30 ℃, and the detection wavelength was 270 nm; the injection volume was 10 μL. The experimental results show that gallic acid,vanillic acid,syringic acid, vanillin, syringaldehyde, and ellagic acid had a good linear relationship in their respective ranges (r≥0.999 9). The average recovery rate was 96.07%~100.95%, and the RSD was 0.82%~4.13%. The method has simple operation, high accuracy and good repeatability, and provides a reference for the application of oak barrels in the liquor industry.
